Try using a Chi-Square goodness-of-fit test ...
Explanation:
The sum of the two dice will fall into 11 categories from 2 through 12 . Each sum has a theoretical probability if it is "fair" [P(2)=1/36, P(3) = 2/36, etc.]
Roll the dice say 360 times and record the sum of each outcome. Then use Chi-Square goodness-of fit with 11-1 = 10 degrees of freedom.
