To put it simply, ethers resist oxidation to the point where strong #C-O# bonds are cleaved, and reformed.

Explanation:

The ether linkage, the #C-O-C# bond, is strong as bonds go. Of course, we can form #C=O# bonds, but we can only do so if we break the #C-C# and #C-O# skeleton.
