More Surface Area is more soluble in oil, but less in water.

Let's say there's a flat and circular molecule. The flat one has more parts of it exposed, and therefore has a more effective dispersion since most of the dispersion which is based off electron density is used. Because of it, the dispersion force holds the molecule together more. But in oil, which also heavily relies on dispersion IMFs, the molecule will separate.

However, as water has really low dispersion due to its low electron density from its small number of protons, its main form of IMFs are H-Bonding Dipole forces. So the object will not dissolve as well in water.
