I am thinking of a molecule that has a polar head group, two fatty acid tails, and is amphipathic. Of what kind of molecule am l thinking?

Probably a phospholipid.
Sphingolipids have similiar qualities, but technically, they only have 1 fatty acid tail (sphingosine has a portion that looks like a fatty acid, so have lots of similar qualities to phospholipids.
