- Aged or fermented foods, such as sauerkraut, yogurt, aged cheese, alcohol, vinegar, and cured meat.
- Fish and seafood, especially canned or smoked fish.
Production in the human body
Mast cells and white blood cells called basophils generate most of the histamine in the human body.
The biochemistry
The enzyme L-histidine decarboxylase catalyzes the decarboxylation of histidine to histamine.
