The digestion of carbohydrates begins in the mouth.

Explanation:

Longer carbohydrate chains are broken down by the enzymes in our saliva. Good chewing and mixing helps this breakdown. Part of the simple carbohydrates (sugars) are even absorbed in the bloodstream while still in our mouth.
The stomach does the rest of the work. In the acid enviroment, the carbohydrate chains hydrolyze even further. Most simple carbs (=mono-sugars) are absorbed in the duodenum, or in the small intestine just past there.
