A triglyceride is a type of simple lipid i.e general fat or true fat.A triglyceride is an ester of glycerol and three fatty acid molecules linked by ester bonds.A fatty acid is carboxylic acid in which the number of carbon atoms in the hydrocarbon part is more than 4.

Thus when a triglyceride id dissolved in water which is a polar solvent, the ester bonds break and glycerol with fatty acids is released
