The process of breaking macromolecules into smaller molecules is called hydrolysis because during the reaction, water is added which breaks the bonds holding the macromolecule together. An enzyme is also required, but is not used up in the reaction.

The diagram below shows the hydrolysis of sucrose (table sugar). You can see the water molecule in blue, and the #"OH"# group and #"H"# atoms bonded to the glucose and fructose. Sucrase is the enzyme that is involved in the hydrolysis of sucrose.
