fats are non polar and the stomach acids and enzymes are very polar. Large clumps of fat molecules are undigestable. The groups of fat molecules need to be broken up and dissolved by the bile into order to be digested. Once the fat molecules are separated into individual molecules, the enzyme can attack and digest the fat molecules.
