The HCl (or invertase enzyme) is required to "invert" or cause the sugar to split into equal parts of glucose and fructose.
Explanation:
Sucrose is a linked double ring. The "hydrolysis" breaks the connection between the two rings and forms the two smaller-ring sugars.
