I can think of three reasons for using a water bath during distillation.

  1. It may be the method of choice if the boiling point is less than 100 °C.
  2. Water has a high specific heat capacity, so it is easy to control temperature by moving the burner and by adjusting the size of the flame.
  3. Economy. A water bath is less expensive than an electric heating coil.

Extra: You can also use a cold water bath for the receiving flask if the liquid has a boiling point close to room temperature.
