Various ways

Speed - obviously if they can't be caught, they can't be killed
Numbers - travelling in large schools reducing the chances of a specific fish dying (as there are lots of fish to pick from)
Camouflage - Squids spray ink and fish hide in coral
Poison - Puffer fish have extending barbs
