To make alcohol of course!

Explanation:

Alcoholic fermentation, as the name suggests, is using microorganisms such as yeast to make alcohol, but can also be used to make bread (due to the carbon dioxide formed). We use drinking alcohol to brew our liquors, such as beer, wine, vodka, etc.

This process is extremely useful in the brewing industry and has been used for hundreds and thousands of years!
