Refrigerated food stays fresh for long periods. The same food stored at room temperature quickly spoils. Why?

Food spoilage and deterioration is a naturally occurring process. Refrigeration slows down several of the processes due to which foods spoil.

Explanation:

Temperature affects storage time and food deteriorates faster at higher temperatures.

Microorganisms grow rapidly at room temperature . Thus to slow microbial growth, enzymatic and oxidative processes, food must be stored at room temperature.

Freezing foods does not destroy microbes present in the food. But freezing does inactivate microbes like bacteria, yeast and molds. Microbes in thawed foods can multiply to levels that can lead to food borne illness.

Freezer temperatures should be maintained below 0*F . Thawing food at room temperature increases the risk of bacterial and fungal growth and accordingly the risk of food poisoning.
Once thawed , the food should never be refrigerated.
