E-Z notation is the IUPAC method for assigning the absolute stereochemistry of double bonds within molecules. It's a similar concept to cis and trans notation, which only assigns the relative stereochemistry.

Groups around a double bond are assigned a priority by the Cahn-Ingold-Prelog priority rules .

If the two highest priority groups are on opposite sides of a double bond, it is assigned E-stereochemistry.
If the two highest priority groups are on the same side of a double bond, it is assigned Z-stereochemistry.
