#"Why are organic compounds that melt unstable?"#

Explanation:

Are you sure that all such compounds are unstable? This would not be my conclusion. Perhaps you would clarify the question?

Alternatively....

#"why are organic compounds THERMALLY unstable?"#...this makes a lot more sense#"..."#consider a saturated organic molecule #C_nH_(2n+2)#...and this could be completely combusted to give carbon dioxide and water...

#C_nH_(2n+2) +(3n+1)/2*O_2(g) rarr nCO_2(g) + (n+1)H_2O+Delta#

And here, both entropy and enthalpy are DOWNHILL; i.e. combustion gives strong #C=O# and #O-H# bonds...and such combustion releases energy....
