Because water has such a high specific heat capacity.
Explanation:
It takes 4.2 Joules to heat up 1 gram of water by 1 degree Celsius.
The same amount of energy is given off when the same gram (or any other gram) cools by 1 degree. this is called the specific heat.
Other materials score much lower, most are even below 1.
