The lemon in water appears bigger due to refraction of light.

the light rays bend when they pass from one medium to another..The glass with curved surface works like a lens and magnify the object..this is due to diffgerent refactive index of air/water/glass,

A beam of light starts from A at the lemon surface and reaches our eye AFTER undergoing refraction (=bending, governed by Snell's Law). Our Brain interprets the beam as a straight beam reconstructing its path as if originated at B, i.e., formed by a bigger lemon!
