As a means of separation, and purification, evaporation is NOT a good means.......removal of the solvent gives a mixture of materials. On the other hand, when a solute CRYSTALLIZES from a solute, usually, only the one type of crystal deposits, and thus the ONE kind of product is isolated. A crystalline material is also fairly easy to collect and handle; much more so than a powder, the which tends to occlude solvent molecules.
