For example, humans can't synthesize their own Vitamin C and so seek for it in their diets, but other animals like reptiles can. This makes Vitamin C a vitamin for humans, but not for reptiles. Minerals are inorganic chemical substances which also play a critical role in nutrition of organism. Minerals cannot be made by organisms, and thus all minerals are key nutrients. The 5 main minerals for humans are calcium, phosphorus, potassium, sodium, and magnesium. Other minerals are needed in very small amounts, and so are considered trace minerals, like iron and sulfur.

Minerals are inorganic and hold onto their chemical structure, and thus are unaffected by temperature, light, storage or cooking, making it easier for humans to gain access to minerals. Vitamins, on the other hand, are susceptible to all those mentioned, and thus are harder to obtain.
