It can express preference, ‘would you rather eat or sleep?’
It can also express a slight or partial degree of something, ‘I am rather hungry.’ Nowadays it is often used in the converse sense, to mean very - blame fashion!
It was also used as an expression of emphasis (archaic now, but common in children’s literature when I was a child), ‘Would you like to go swimming?’, asked Lucy. ‘Rather!’ exclaimed Susan.
