These enzymes are now undergone study in laboratories. These enzymes are strong proteolytic enzymes.
In a laboratory the number of substrate molecules broken down at temperature are plotted and the optimal activity is calculated.
There is no wonder how these enzymes work at low temperature in Antarctic shrimp. Mostly these shall optimally work at temperature 40 o C .
