This is the same reaction that many elementary teachers show as a volcano. It is very simple and clean up is relatively simple as everything is easily washed down the drain when you are done.
The reaction is a fairly quick one and can (depending on how much of your reactants you use) generate a pretty large volume of gas. A simple capture apparatus can be made from a soda bottle, rubber tubing and a balloon. If you are aiming for large amounts, you will need to be creative in building an apparatus.
Be careful with your gas capture as this generates lots of bubbles and can easily overflow into the capture container. It can also burst if it builds too much pressure.
