People pass gas when they are nervous because of cortisol production.
Explanation:
Cortisol is a hormone which is in charge of the fight or flight response of the human body in response to a stressor.
When you are nervous, the cortisol realizes the body is undergoing stress and will increase your metabolic rate to enhance your perception and mobility although this may vary per individual.
When your metabolic rate increases, acid content in the stomach increases and so does your peristalsis (movement of the intestines) as well which makes you prematurely pass gas and/or defecate.
