Farmers add fertilizers that contain nitrogen and phosphorus to their crops. Why don't they add carbon as well?

Because green plants are capable of fixing atmospheric carbon, and converting it to simple sugars.

Note that farmers and gardeners regularly add organic matter to their soils to improve drainage etc and to condition the soil.
