sucrose is the pure sugar and it is crystalline in nature.

Explanation:

the pure honey we get from bee hive is crystalline as it is purely sucrose. but the honey we commercially get in packs are the ones that are adulterated. therefore, during the process of adulteration, the pure form of sucrose is lost. that's why these adulterated honey do not crystallize.
