They are differentiated based on equal or unequal sharing of electrons.

Explanation:

Polar Covalent bonds
When the two atoms who shared their electrons and bonded to each other lets take case of HCL As Cl is more electronegative it will pull the electron of H in its circle more hence creating poles with Cl part more negative and H part more positive.

Non Polar Bonds
When Electrons are equally shared between two atoms for example take the example of H2 H-H both share the electrons equally hence this is non polar bonds.
