I am required to take anatomy and physiology as a prerequisite for an Associate’s Degree in Nursing (ADN). Will the laboratory part of this course involve dissecting animals or working with cadavers?

Animals yes, cadavers no.

Explanation:

I took Anatomy and Physiology as part of an Associate's degree before my Bachelor's. We were required to dissect a cat and identify organs, muscles, and different systems of the body. It usually varies from school to school and professor to professor. These were only my experiences. If you have any questions, perhaps you can email one of the Anatomy professors at your school and ask.
