See this old answer and links. And thus bitterness probably relates to the $p H$, with $p H > 7$ giving a soapy, bitter flavour. Note that we commonly drink $\text{bitter beer}$, in Old Blighty it is common to order to pint of bitter in a pub. Beer, like wine, and cheese, and lemon juice, and most things that taste good, is slightly acidic.....
