Acid plus base = salt and water, or:

#HX(aq) + MOH(aq) rarr MX(aq) + H_2O(l)#

Explanation:

The acid #HX# reacts with the base #MOH#, to give the salt, #MX#, and a water molecule. That is the general rule. Of course, chemistry is an experimental science. The equation follows the experiment, not vice versa! The reaction is energetically favourable because you are making a strong #O-H# bond, and a strong water molecule.
