Surely this is #"percentage milk fat"#?

Explanation:

Whole milk direct from the mooey is approx. #4-5%# milk-fat by mass...i.e. #"mass of fat"/"mass of milk"xx100%# (and this is probably why it tastes so good!). Skim milk is approx. #0.1%# and much less palatable... Yoghurts are enriched with respect to fat...(and why they taste good...!).
