Strong acids fully dissociate whereas weak acids only partially dissociates - often producing very few hydrogen ions in solution.

The mineral acids tend to be strong acids e.g. sulfuric, nitric and hydrochloric. Weak acids tend to be organic e.g. ethanoic, benzoin, citric. However acids like HCN are also weak.
