I think to get the oil (and other ore minerals) and deprive the URSS of them.

Explanation:

The region of the Russian Caucasus comprised the famous Baku Oil Fields (allegedly the richest of the world at the time) that could, if conquered, give the Germans abundant oil to feed their mechanized war machine.
