I know that she is dreaming and everything, but why does only one of her paws move? Is it normal, do I do it too?

Like us, dogs can dream too! When she moves in her sleep, it is likely that she is acting in her dreams, just like us sometimes. Nothing to worry about, and it is all natural. The reason why one of her paws move is just randomness, and is unpredictable. She might be touching something in her dream, and so only one of her paws move.
Aside from that, there is nothing to worry about, as we humans do it too.
