Part fill with water and measure the increase in volume when the rock is added

Explanation:

if you fill the measuring cylinder to say half way with water, measure the volume of water, then add the rock and measure the water level again. The difference in readings will give you the volume of the rock (the rock must be fully submerged for this to work)
