Matrix of bone is solid while matrix of blood is liquid. Moreover bone cells secrete the matrix material but matrix of blood is not secreted by blood cells.

About 40% of bony matrix is organic, made of ossein protein, collagen, and proteoglycan. Rest of the bony matrix is mineral in nature, mainly salts of calcium and phosphate.

Matrix of blood is called plasma. The plasma is 92% water and minimum 6% protein (albumin, globulin, fibrinogen, etc). There are glucose, amino acids, several electrolytes, hormones, urea, etc present in plasma.
