Soft iron like other soft ferromagnetic materials has low coercivity.
In case of the electromagnet, coercivity of the core material should be pretty low, so that demagnetizing process is easier. (Demagnetizing may be required since it is not a permanent magnet)
Also, soft iron has higher permeability, and high retentivity which makes it an outstanding material for the core of an electromagnet.
