Why is starch not digested in the stomach?

Because it is already degraded inside the mouth and pancreas to be then absorbed in te small intestine.

Salivary glands and the pancreas secrete various enzymes such as amylase which catalyse the starch (polymer) hydrolisis into simple sugars (monomers).

The hydrochloric acid in our stomach would destroy starch molecules.

This organ hasn't the precise enzymes to break down complex sugars.

Plus, animals are not completely adapted to digest starch as it is much more abundant in plants.
