Your equation is incomplete and lacks any Cu in the products. And you cannot destroy matter in a chemical reaction. In fact a precipitate of CuCO3 would also result. Hence:

2NaHCO3 + Cu(NO3)2 ==> 2NaNO3 + H2O + CO2 + CuCO3 (ppt)

The intermediate cupric bicarbonate apparently self destructs in Cu(HCO3)2 splitting off water and CO2. It's the very insoluble CuCO3 that drives the reaction to completion.
