Why is it important to make sure all the NaHCO3 has reacted with the HCl before you stop adding acid ?

You don't want a buildup and accidental excess of HCl to clean.

Explanation:

Basically, you don't want to add too much acid or else the #NaHCO_3# will be completely used up and the excess acid with then have to be neutralized with more base.
