Mesas. "Mesa" is the Spanish word for "table".

Explanation:

Originally they were hills or ridges generated by tectonic activity. The rock layers in these features have different resistance to erosion by wind and sand, and when vulnerable layers are thus eroded away the flat tops of more rugged rick remain. See here.
