Enzymes and bile.

Explanation:

  • Bile is made in the liver, stored in the gall bladder and secreted through the bile duct into duodenum. This emulsifies fats giving them a larger surface area (a form of physical digestion) for their more efficient digestion into fatty acids and glycerol by lipase.

  • Other enzymes include (chemical digestion):

1-Amylase in saliva for carbohydrate digestion.
2- Pepsin in stomach for protein digestion.
3- Trypsin in small intestine released in pancreatic juice for protein digestion.
3- Lipase in small intestine released in pancreatic juice for lipid digestion.
4-Other enzymes include sucrase (for sucrose digestion), maltase (for maltose digestion), lactase (for lactose digestion), etc.

P.S. Water is very important because it's one of the reactants required for those all the hydrolysis reactions.
