Actually there are green stars, but they don't appear green to the human eye.

Explanation:

Star colour is related to the temperature of the star. We know that stars cover the visible spectrum as there are red, yellow and blue stars. So, there must be green stars.

The human eye is most sensitive to yellow/green light. The key to the mystery is the colour of stars in increasing order of temperature. These colours are red, orange, yellow, white and blue.

So, the colour of stars which are in the green part of the spectrum appear white. Stars actually emit light at all wavelengths. So, although the star should appear green, all wavelengths combine and the eye sees white. In fact, although our Sun is a yellow star, it is so bright that all of the wavelengths combine to make it appear white.
