Like dissolves like. A polar solvent will dissolve a polar solute and a non polar solvent will dissolve a non polar solute.
For example, since water is polar if we try to dissolve alcohol in it (which is also polar), it will dissolve easily. However if we try to dissolve something like CH4 in it (which is a non polar molecule) it will not be able to dissolve.
Polarity is very important and helps to explain many different properties of substances such as boiling and melting point, as well as what will dissolve better in a specific type of solvent.
