In the solid phase, particles are closely packed such that there is definite short range and long range order.

In the liquid phase, the phase is still dense but the individual particles can move fairly easily with respect to each other.

In the (vastly less dense) gas phase, particles can move freely with respect to each other, and there is no particle-particle interaction.
