Water runs downhill and the potential energy is converted to kinetic energy and from there to electrical energy.

Explanation:

The process relies on having a turbine (effectively a propeller) in the water flow. This spins as the water flows over/round it and turns a magnet, the magnetic field spins round forcing electrons to move (a current) in the wire surrounding it. Voilà!
