In the extraction procedures, how do I know layer is on top and which is on the bottom????

Liquids will separate the basis of chemical polarity and density. The heavier liquid will be on the bottom.

Explanation:

Generally, non-polar liquids (oils for example) will be less dense than polar (water-soluble) compounds - or at least less dense than the water solution containing water-soluble compounds.
