Well salts are involatile, whereas water is (reasonably) volatile.

Explanation:

So one method of separation is to boil the water, and condense the distillate. It would not be economic to do this on a large scale: sea salt is collected from brine by evaporating the water, but here the sun is used to evaporate the water.
