Oxygen is vital to cellular respiration in the mitochondria.

fermentation can only produce 3 ATP energy molecules from a sugar molecule. With Oxygen combining with Hydrogen ions in the mitochondria 1 sugar molecule can produce 36 ATP energy molecules.

Without Oxygen the "burning" or metabolism of sugars would be incomplete in our cells much like what happens in yeast cells.
