With countable nouns you use many, with uncountable - much.
Explanation:
To measure the quantity of countable nouns you use: many, few.
For uncountable nouns you use: much and little.
Words any, some are correct in both cases.
Examples:
apple - a countable noun
How many apples do you have?
I have some apples.
Do they have any apples?
They only have a few apples
salt - an uncountable noun
How much salt do you have?
I have some salt.
Do they have any salt?
They only have a little salt.
